Snowy River Satay
Satay is a southeast asian dish of seasoned, skewered and grilled meat served with a peanut/soy flavoured sauce. The Snowy River Satay is a spin off of this infamous street food and can be used as a marinade for your BBQ Skewers, or cooked up and served with rice and vegetables for a tantalising rich creamy sauce on just about any meat or vegetable choice.
The mighty Snowy River originates just below the highest mountain in Australia, Mount Kosciuszko, and drains away through the Snowy Mountains, The Alpine National Park and the Snowy River National Park before emptying into the Bass Strait in Victoria.
The name has been immortalised in the infamous poem by Banjo Paterson, The Man from Snowy River, written in 1890.
Folklore in the Upper Murray tells us Mr Paterson got his inspiration from a man by the name of Jack Riley, a stockman of the Upper Murray. He is buried at Corryong Cemetery, and every year the spirit of this character is celebrated at the Man From Snowy River Festival.
This is a regular favourite in the family home of The Khancoban Kitchen.
