Major Clews Chicken

Juicy chicken pieces covered in spicy, crispy batter and fried (either deep, air, or shallow), or even baked, now you can make it at home and rival the take away alternatives!

Whilst the US of A may be the most famous for its Fried Chicken, the dish itself comes from a combination of Scottish frying and West African seasoning techniques. Who knew fried chicken had so much history!

Major Clews is a pretty famous fella in the Khancoban Valley. For 8 years he was a Senior Surveyor for the Snowy Mountains Hydro Electric Scheme, and locations across the ranges such as Guthega, Geehi, Three Mile, Tumut Pond, Indi and Scammels Spur among others are familiar to Australians because of the Major.

He retired in Khancoban Valley in 1958, and died in 1980. His ashes lay to rest near Major Clews Hut just up the road from The Khancoban Kitchen.

He would have loved a bucket of fried chicken with his token drink Lowndes Rum and Schweppes Dry.

Please note, the sachet does not contain gluten, but it is suggested you use plain flour as part of the fried chicken batter. If you need it to be gluten free, simply use tapioca (arrowroot) instead of flour.

Alternatively, the smaller version you can use as a seasoning on or in just about anything. Use it to flavour chicken soup, or as a chicken stock base. Flavour your potato bake with it, you won’t regret it!
