Laksa is a spicy noodle soup popular to South East Asia, in countries such as Malaysia, Singapore, Thailand & Indonesia.

The soup base is made from coconut cream or sour asam, blended with a mix of rich punchy spices that give it a wonderfully intense and warming flavour. It is served on a bed of noodles, with meat, vegetables or tofu, and topped with bean sprouts and fried shallots.

This is by far my favourite soup in the entire world, because it has so much texture and flavour, and can really be worked to suit whatever you want to put in it!

Long Plain is a treeless expanse for approximately 18km north to south on the Western side of the Kosciuszko National Park. It’s entrance is on the Snowy Mountains Highway about 45 minutes from Talbingo heading to Adaminaby.

There are lots of campsites, traditional mountain huts, walking trails, and the famous Yarrangobilly Caves complex not far away, so it makes a great spot to launch a Snowy Mountains adventure.
