Traditionally, Rogan Josh is an aromatic mutton dish of Persian origin. It’s also the 1999 Melbourne Cup winner. At the time my then boss backed it as the winner. When I asked what made her choose that horse, she replied ‘Well, there’s nothing like a good curry!’

You can also have the vegetarian version by adding vegetables such as eggplant, cubed cauliflower, and sweet potato.

The Gang Gang cockatoo is a native bird to the Australian alpine bushland region. The male is easily identified by it’s red head and crest, and grey body, they have a pretty distinctive call which sounds like a creaky gate, or the sound of a cork being pulled from a wine bottle. There are some great examples of its call found here.

Rogan Josh curry gets better with age, and the next day the spices generally come out stronger making for a hearty lunch of leftovers.
