Chilli Con Carne is a spicy stew containing mince, beans, spices and chillis, and tomatoes. Traditionally packed with garlic, onions and cumin, this Mexican inspired dish can be eaten a number of ways, and left overs are better than the original dinner!

Perfect for a camping trip, it can be pre made and re heated in the camp oven. It can be served with rice, bread/tortillas or corn chips, with a plethora of salad accompaniments including salsa, corn, guacamole, cheese, sour cream and jalapeños. Make it how you like it!

Cooinbil is one of my favourite huts of the Kosciuszko National Park. Located on the eastern side of Long Plain, at the northern end of the park, and is a perfect camping spot for a park adventure. It’s close to Yarrangobilly Caves, Blue Waterholes, Long Plain Hut and Currango Plain.

Many a morning campers awake to the sight of brumbies grazing in the morning mist at the front of the hut. It’s a traditional timber hut just on the edge of the treeline, and a well deserved beverage in the afternoon under the shade of the eucalypts is a trip back in time for many a visitor.

Serve yourself up a steaming bowl of Chilli Con Carne after a long days riding or hiking, or cook it in your own kitchen for Friday night footy. It will be delicious either way.
