Madras curry is a spicy curry that makes pretty heavy use of chilli powder. It is said to originate from Chennai in India, and can be made vegetarian or with meat. It’s suggested you use beef, but this curry is one that goes with just about anything you want to put in it.

Cabramurra is the third highest permanently inhabited town in Australia, at 1488m. It was established in 1954 as part of the Snowy Hydroelectric Scheme. There is a direct road between Cabramurra and Khancoban, however it is closed during the winter months due to snow.

On a good day, the drive is fantastic past Tooma Dam & Tumut Pondage. The road eventually heads back to Tumbarumba via the Eliot way, or to Kiandra and back onto the Snowy Mountains Highway to either Tumut to the North or South East to Adaminaby.

A madras curry would be a great campfire meal with rice and bread on a cold snowy night up on the range.
